Taco Night

I've been cooking more and more, and as I go along, I've been refining recipes, so I'm including them here.

One of our favorites is Taco Night - I get a package of tortillas, some cheddar cheese, sour cream and salsa. For a long time I also picked up a package of taco seasoning, but I realized that I didn't really want to be putting that much salt into my body. Never mind Claire's. So I did a little looking around and came up with this recipe

1 lb ground beef or turkey (or a mix of both)
2 cups diced white mushrooms. (gotta get the kid to eat veggies somehow)
1/2 cup frozen chopped spinach (see above. I buy it buy the bag and add it anywhere I can)
onion flakes
garlic powder
chili powder
cumin
1/2 cup water

Brown the meat, and remove it to a colander. Rinse thoroughly to help drain off as much of the fat as you can. Sautee the mushrooms and spinach until the liquid is released and the mushrooms have started to shrink. Return the meat to the frying pan, and season with onion, garlic and other spices, until you have something that you like the flavor of. Add a bit more water and simmer.

Serve with taco toppings.
