I mixed this up for my lunch today. Fantastic!
1 cup cooked whole-wheat penne
1 oz crumbled feta cheese
2 oz cooked chicken breast, cut into cubes
1/4 cucumber, cut into chunks
1 hard boiled egg
1 cup steamed broccoli & green beans (just some leftovers I had on hand)
about 2tsp olive oil
splash balsamic vinegar
salt, pepper, dried oregano (or if you have it, a pinch of zatar spice)
Mix ingredients together and season.
Dive in! (This is a bit protein/fat heavy with the egg, cheese and chicken, but my breakfast was all carbs today, so I wanted to balance it.)
