Dinner tonight
After the eating extravaganzas of the past three days, I wanted to make something for dinner that was simple and would work on cleaning out my fridge a bit.
Mom gave me a container of turkey and one of green salad after Christmas dinner the other night. I also have a huge amount of pasta from Christmas Eve...so I decided to invent a cassarole:
Turkey Taco Cassarole
4 cups cooked pasta (like rotini, or penne)
1 1/2 cups cooked turkey, cut in cubes
1 can black bean soup
1 cup salsa
1/2 package pre-shredded taco cheese
1 bell pepper diced
Mix ingredients, leaving a little cheese to sprinkle on the top.
Bake for 45 minutes, or until brown and bubbly.
I also added about 3/4 cup of ground turkey, seasoned for tacos that I had left over!
Serve with salad with ranch dressing
