Adventures in Agriculture

We lucked out this week - a friend is away and offered us her entire fruit and vegetable shares from the CSA.

We scored!
  • bag of regular peaches
  • bag of "donut" peaches
  • bunch of carrots
  • pint of cherry tomatoes
  • several pounds of beefsteak tomatoes (possibly heirloom, definitely ugly)
  • 4 smallish zucchinis
  • 4 bell peppers
  • 1 cantaloupe
  • 1 baby watermelon (same size as the cantaloupe)
  • two enormous eggplants (I weighed them, one is over 2 pounds)
  • 2 heads of lettuce - one redleaf, and one is um, not
We will probably eat most of the fruit out of hand, but I will look up some recipes for galletes. I figure I will just need to make a crust and the peaches will be fine on their own

We're going to a BBQ at my parents on Saturday, so I will offer to bring a salad, taking care of the lettuce, and the cherry tomatoes. I might even bring the watermelon.

Tomatoes - I'm thinking some sauce, maybe roasting. There's not a huge amount, but it's more than I'm used to. And the eggplants - not sure. I've never made baba ganouhj successfully. An attempt yesterday was grosser than gross. Maybe I will try my hand at ratatouille.

Any suggestions?

I dont like canned tomato soup either, but this looks good!
