Dinner tonight
The weather the last few days has been rainy and cool. It cleared up yesterday and stayed suprisingly chilly for the last day of April.
So dinner is soup - a version of beans and greens that I found on recipezaar.com a while back. It's quick and easy, and as I discovered tonight, adapts pretty well to variation. (The link is to the recipe as it was written, this version is what I made tonight:
Beans and Greens Soup with Sausage
1 large onion, chopped
3 cloves garlic minced
1 package smoked turkey sausage, cut into chunks (I used Aidell's Portobello mushroom)
3/4 carton low sodium, lite chicken broth
1 can pinto beans
1 can white beans
1 package baby spinach
(WW Points, about 3 per cup.)

1 package baby spinach
- Sautee the garlic and onion in a big ole pot until translucent (not burned like I did tonight)
- Add the sausage and cook until the edges start to curl.
- Add both cans of beans and mush it up with your potato masher (there is one kind of beans that I sometimes get where the beans are very soft and squishy, so I would skip the mashing part)
- Let it come to a boil, then add the whole package of spinach. Stir the leaves in so they wilt.
(WW Points, about 3 per cup.)
