Last night I made one of our new favorite dinners. It started off as a recipe for pork chops that Kayakboy found somewhere on the web, but the chops went in the freezer and I had a boneless turkey breast..so I used that instead.
boneless turkey breast, or lean porkchops, or boneless chicken breast
4-5 large white onions, sliced
1 cup mustard, (I use Gulden's)
1 cup honey
salt & pepper
paprika
Preheat oven to 350.
Place the onions in the bottom of a 9x13 pan, if you like onions, add more. There should be a lot of them. Now, season the meat with the salt and pepper and paprika.
I do this next part with my hands. It's goopy and slimy but lots of fun. Slather the meat with the mustard. You should end up with a mustard colored lump of meat. Now, put the meat into the pan, on top of the onions. Pour the honey over the top. Into the oven she goes, until done. (I use a meat thermometer - 170 internal for the turkey 150 internal for the pork. I haven't done chicken...)
Serve with some sort of starch to absorb the honey-mustard juice that you end up with. Honey-mustard onions!!!! Oh. So. Good.
