Fancy-Schmancy Tortellini Soup
My mom makes this for company. I just make it when I feel like it.
Otherwise known as tortellini en brodo:
1 package frozen cheese tortellini
2 boxes chicken or vegetable stock
1 large can diced italian style tomatoes
4 cloves garlic, chopped
1 package fresh baby spinach
grated parmesean cheese
Sautee garlic in olive oil in the bottom of your big soup pot. Once it's translucent, add the stock, and the tomatoes and bring to a boil. Add the entire package of tortellini (they can still be frozen) and cook until al dente. Five minutes or so before serving, stir in the spinach and let it wilt. Serve in big bowls and sprinkle with the grated cheese with crusty bread alongside.
